We are pleased to offer our 4th vintage Cabernet Severnyi. The 2007 is screaming with rich fruit, vivacious acid and full body. Aged no less than 18 months in French and American Oak barrels, this wine delivers a wallop! 

 

Winemaker's  Notes
The Cabernet Severnyi is just now starting to show its true opulent color and highly concentrated cabernet purity of flavors and origin. A beautiful balance of power and elegance, this vibrant wine is delicious enough to enjoy now.

 

Should you wish to hold in anticipation that this wine will continue to gain weight and length, I recommend a cellaring of 2-3 years. Personally, I foresee it will drink beautifully up to 10-15 years from release.

What a pleasant surprise. This is the first wine from Quebec that I have tasted and my first taste of the hybrid Cabernet Severnyi. Deep purply red in colour, spicy with cloves on the nose with just a hint of oak. Crisp and balanced acidity, smooth tannins. This wine reminded me of some what of the Okanagan merlot’s that I have tasted. It is my kind of wine – not an over powering Aussie fruit bomb, but an elegant and somewhat old world style wine. Big enough to work well with grilled red meats such as lamb chops right off the BBQ. As to its ageability – It is drinking wonderfully right now so why risk it changing.

"Nose: Sweet black fruit (elderberry, cherry, blackberry, blueberry, cassis) with bits of smokey oak and hints of spice. Palate: Dry with refreshing acidity, midweight. Really nice fruit is highlighted by subtle oak nuances, and follows the nose well. Some buttery/oaky/vanilla softness and light spiciness midpalate with a long clean dry finish. Conclusions: Very unusual but high quality wine vaguely reminiscent of good northern Italian wines in the acid/fruit/alcohol profile, but unique as well. Would go very well with foods containing tomato. Something for the jaded palate, or for those who like refreshing reds. Not really for those who purchase the big-name, well-known wines. Too much character for that. Should hold well for 3 to 5 years but I've no experience to base this on with this variety."
