VENICE, Quebec’s first Pinot Noir is already very
expressive, boasting aromas of cherry, fennel, licorice and cedar. The
earthy aromas lead to a generous palette of well balanced acidity and
discreet tannins. Ideally served at 14-15 °C this wine pairs wonderfully
with lamb and soft cheeses.
Winemaker's Notes
To produce our Pinot Noir we fermented 70% whole
cluster and gently pressed the remaining into our state-of-the-art open
top, climate controlled fermentors. The must was cold macerated for a period
of 15 days and fermented between 21-30°C. During fermentation, the cap was
punched down by hand. This Pinot was aged no less than eight months on
their lees in French and American oak barrels.

Reviews
Very impressive - my first taste of a grape wine from Quebec. I was shocked
to hear that Quebec actually has more wineries (not all grape wine
producers) than British Columbia. So I blind tasted it side-by-side with a
BC Pinot Noir and was impressed indeed.
Undoubtably this is a young wine but its extremely pretty, feminine in fact,
with loads of lilacs and rose petals, raspberry and vanilla notes, a hint of
blueberry and undertones of spicebox, leather and forest floor. It is
light-bodied and silky with bright red fruit flavours, sweet spice and
cedar. The tanins are smooth and fine spice flavours linger on the finish.
Bravo.
